Yes, I’m back with part two of my eating on a budget challenge. Last week I showed you how I shopped on a €25 budget for an entire week. I managed to get everything on my grocery list, which ended up being fifteen items for €25,20. Not bad, if you ask me! In this video I’m showing you all the meals I made with the items. The video didn’t turn out the way I wanted to, but since it was my first time recording an entire week of meals, I’d say it’s okay. I really hope you like watching my Keto meals for 7 days on a budget.
In this video I’m showing you what I ate for the entire week, from Monday to Sunday. I had an entire menu prepared, but I had to alter it as the week went by. All the Keto meals you’re about to see are based on that menu, except for the cauliflower soup and the sweet meatballs. I’m still very proud of being able to create a meal plan for an entire week. I want to do this more often, because it made me very creative and responsible in the kitchen.
This is the menu I had planned for the Keto meals on a budget:
Monday
1. Omelette with three eggs, half a baby avocado, shredded cheese and sliced chicken breast.
2. Tofu with bell pepper, pine nuts and almond butter sauce.
Tuesday
1. Spinach soup with creme fraîche and a potato (I added two boiled eggs later).
2. Stuffed bell peppers with minced beef and shredded cheese.
Wednesday
1. Spinach omelette with three eggs, cheese and sliced chicken breast. Adding bell pepper and/or mushrooms on top. I ended up just using mushrooms baked in butter topped with cheddar cheese.
2. Cauliflower with baked minced beef, raisons and pine nuts for a crunch.
Thursday
1. Spinach soup with creme fraîche and a potato (I added two boiled eggs later).
2. Stuffed bell peppers with minced beef and shredded cheese. I didn’t make this dish as I got a stomach ache in the afternoon and just drank a lot of tea.
Friday
1. Cauliflower with baked minced beef, raisons and pine nuts for a crunch.
2. Minced beef in the oven with cheese or crème fraîche. I ended up making cauliflower soup instead.
Saturday
1. Tofu with bell pepper, cauliflower, pine nuts and almond butter sauce. I chose to eat soup instead for my stomach ache.
2. Potatoes in the oven with minced beef and deviled eggs on the side. I made sweet meatballs with cauliflower instead.
Sunday
1. Deviled eggs and mushrooms baked in butter on the side. I ended up eating left over soup and the sweet meatballs.
2. Potatoes in the oven with minced beef and deviled eggs on the side. I had the rest of the sweet meatballs with cauliflower instead.
As you can see I mostly ate everything I had planned out. The only thing I found hard to stomach was the minced beef because it was a bit too fat for my stomach. Usually this isn’t a problem, but the stomach bug wasn’t letting me hold down the minced beef. All and all, I’m quite happy with the results. There was little waste by the end of the week. I had about five bell peppers left, about 100 grams of spinach, 100 grams of crème fraîche and some eggs.

The original video with all the meals was much longer, but it was over thirty minutes, oops! I didn’t realize that filming all the recipes was taking way too long. That’s why I took them out and writing them out in my first recipe eBook. That eBook will be available soon, so keep an eye out! I will of course update you on the eBook and I hope this video will give you some inspiration in the meantime.
I think my challenge worked out pretty well with a lot of good Keto meals for 7 days on a budget. Let me know if you want to see more videos like this, so I can make more of them!
